步骤

1. Wish the meat and cut into blocks

2. Heat the oil with small fire a little, then put crystal sugar in and let sugar melt into oil by mixing them. Tips: personally I prefer crystal sugar, normal sugar works also.

3. After all the sugar melting into oil, change to middle fire put the meat into oil and keep mix and fry to make sure every meat around by sugar oil.

4. Fry until the meat color changed, then bail the meat out

5. Adjust the oil if too much, pull some out. Then put papered garlic,ginger,leek white part, chilli, Sichuan paper and star anise to fry a little, then when the smell out, put meat in and keep fry.

6. Put cook alcohol, light and strong soy sauce and continue to fry.

7. If you think all the sauces mixed enough, you could stop fry, and put hot water util all the meat is cover by the water.

8. Change to small fire and boil 1.5-2h depending on you like more soft or more chewy.

9. Then put other spices in and mix a little,Try the taste during the process, if it is too light put more soy sauce
